The vibrant Northern Ruby and Kita Murasaki varieties boast a high concentration of the polyphenol pigment anthocyanin. Hokkaido’s crisp climate, characterized by significant temperature fluctuations between day and night, fosters the development of flavorful potatoes. “Jaga Pirika” is crafted using the Toyoshiro, Northern Ruby, and Kita Murasaki varieties, all exclusively cultivated in Hokkaido. In collaboration with dedicated potato farmers, we have perfected the soil composition and fertilizer formulation specifically tailored for potato growth. After harvesting, the potatoes undergo rigorous quality checks and are stored at precisely controlled temperatures, preparing them for the next stage.
